Our Lambs are raised naturally and organically on regenerative Certified organic pastures all season. We never lamb out of season. All lambs are born in the spring. This is for one pound of Lamb Liver. Lamb is a good source of protein, the contains high levels of essential amino acids, it is a rich source of vitamin B12 and iron, and it's also a good source of zinc, selenium, and niacin. Sometimes called “land salmon,” referring to the healthy omega 3:6 profile that both foods share. Grass-fed and finished lamb has the healthiest fatty acid/omega 3:6 profile of any commonly eaten land animal. It is also high in vitamins B12 and B3, selenium, zinc, and protein.
Before cooking lambs' liver, it is important to remove any excess membranes or connective tissues. Rinse it under cold water and pat it dry with a paper towel. Some individuals prefer to soak the liver in milk for around 30 minutes to reduce any perceived bitterness, although this step is optional.
Lambs' liver should be cooked until it is firm but still slightly pink inside. Overcooking liver can result in a tough and dry texture, so it’s best to pay close attention and avoid prolonged cooking times. It is recommended to cook lambs' liver for approximately 2-3 minutes on each side for a tender and pink center.
