Our Lambs are raised naturally and organically on regenerative Certified organic pastures all season. We never lamb out of season. All lambs are born in the spring. Lamb shanks are an ideal protein for braising, a combination cooking method that starts with pan-searing followed by slow cooking in a liquid—usually in a Dutch oven or a slow cooker. The benefits of eating lamb shank include: it's a good source of protein, it contains high levels of essential amino acids, it is a rich source of vitamin B12 and iron, and it's also a good source of zinc, selenium, and niacin. Sometimes called “land salmon,” referring to the healthy omega 3:6 profile that both foods share. Grass-fed and finished lamb has the healthiest fatty acid/omega 3:6 profile of any commonly eaten land animal. It is also high in vitamins B12 and B3, selenium, zinc, and protein.
